In a bowl, combine the flour, water, instant yeast, and salt. Add the 29 g of butter and knead until you obtain a smooth and elastic dough.

Then remove it from the oven and spread the mashed potatoes evenly over the base, the grated cheddar and mozzarella, the sautéed onions, and another layer of cheese.
Bake again and cook until the cheese is completely melted and the crust is golden brown.
