Soak the soy granules in hot water with a little soy sauce (or tamari for coeliacs) for about 10 minutes
To make the egg substitute, blend the flax seeds and soak them in warm water for 10 minutes
Meanwhile, clean and chop the onion and carrot in a mixer
Put the chopped onion and carrot in a bowl and add the squeezed soy granules, the flaxseed mixture, which will have thickened, the spices, the herbs and the salt
Mix well and shape the burgers
Cook them in the air fryer at 180° for 15 minutes or until golden brown, or in a conventional oven at 180° for about 20 minutes or until golden brown, turning them gently halfway through cooking
I put the burger in the sandwich bun (gluten-free bread if you are coeliac!) toasted first in a pan. Fill it as you prefer, but don't forget the plant-based mayonnaise, it can't be missing! 😜
