Wash and dry the mixed vegetables well.
Cut the vegetables into small pieces or thin strips as preferred.
Heat a tablespoon of extra virgin olive oil in a pan.
Sauté the vegetables over medium-high heat for about 5-7 minutes, until they become tender while maintaining some crunch.
Add a pinch of salt and a sprinkle of oregano, stir and remove the vegetables from the pan.
Place the spelt crackers on a serving platter and top with the sautéed vegetables.
Gently place the marinated anchovies on top of the vegetables and finish with more oregano if desired.
