Wash the apples thoroughly, peel them and cut them into chunks. Put the pieces in a bowl and sprinkle with a little lemon juice to prevent them from oxidizing.
In a large bowl, crack the eggs and add the brown sugar. Use a whisk to beat everything until light and frothy.
Add the extra virgin olive oil and water to the egg and sugar mixture. Mix well to combine the ingredients.
Sift the rice flour and cream of tartar baking powder, then gradually add them to the mixture, continuing to stir. Add the pinch of salt.
Fold the apple chunks into the mixture, gently mixing with a spatula to distribute them evenly.
Line the baking pan with parchment paper and pour in the batter, smoothing it with a spatula.
Preheat the oven to 180°C and bake the cake for 30-40 minutes. Check doneness by inserting a skewer in the center: if it comes out clean, the cake is ready.
