
Fruit tart "fake": a soft and light pancake-like base, no oven and no added sugars. Easy and quick to prepare, perfect for breakfast, brunch, or a snack. Garnish with ricotta or Greek yogurt and fresh seasonal fruit.
In a bowl, combine the egg whites, Greek yogurt, oat flour, rice flour, coconut oil, and baking powder. Mix with a hand whisk until you obtain a smooth and homogeneous mixture.
Heat a non-stick pan over low heat. Pour the batter evenly and cook until the surface is no longer liquid, then gently flip and cook the other side. Let it cool completely.
Spread a layer of ricotta or yogurt on the cooled base and garnish with fresh seasonal fruit (strawberries, blueberries, kiwi, banana).
