Pour the soy drink into a fairly large pot and bring to a boil
Turn off the heat and pour in the lemon juice in a thin stream with circular movements
Close with the lid and wait 20 minutes
At this point, line a colander with a clean kitchen towel
Pour in the contents of the pot
Take the upper edges of the towel and twist them to squeeze out and remove the excess water.
Let it drain in the colander or in a ricotta mold.
Place in the fridge (I recommend overnight) to use it the next day
