Preheat the oven to 200 degrees fan-assisted.
Clean and cut the potatoes into cubes.
Rinse the potatoes several times in cold water until the starch is completely removed.
Boil the potatoes in boiling water with a teaspoon of baking soda for about 10 minutes.
Drain the potatoes and season with oil, salt and herbs to taste.
Bake the potatoes in a fan oven for about 20-30 minutes.
Serve hot and crispy.
