
A gluten-free and lactose-free version of the classic mozzarella in carrozza, cooked in the air fryer for a crispy coating and less grease.
Dry the mozzarella well with paper towels and cut it into thin slices.
Prepare the sandwiches: place the mozzarella on 4 slices of bread and cover with the other 4 slices. Press the edges well to seal.
In a bowl, whisk the eggs with the milk, then add salt and pepper.
Coat each sandwich first in the rice flour, then in the egg, and finally in the breadcrumbs. For an extra-crispy coating, repeat the egg + breadcrumbs step.
Arrange the pieces in the air fryer basket and brush or spray them with a little oil.
Cook in the air fryer at 190°C for 8–10 minutes, turning halfway through, until evenly golden.
