Professional bartender Ryan Magarian received a complex summer botanical infusion from a friend in Portland. Finding it unlike anything he had ever tasted, he soon began searching for its producer, House Spirits Distillery. Realizing that they shared an interest in spirits, cocktails and food pairings, the distillers at House Spirits agreed with Ryan on the idea of creating a somewhat unconventional regional gin style. In June 2006, after almost 30 attempts, Aviation Gin was born. Many believe it was the first collaboration between distillers and bartenders in American history.
