Aviation American Gin, the distillery's most famous product, was born in the summer of 2005 at a small party in Seattle. Professional bartender Ryan Magarian received a complex summer botanical infusion from a friend in Portland. Finding it unlike anything he had ever tasted in his life, he soon began looking for the producer, House Spirits Distillery. Realizing they shared a common interest in spirits, cocktails, and food pairings, the House Spirits distillers agreed with Ryan on the idea of creating a somewhat heretical regional style of gin. In June 2006, after nearly 30 attempts, Aviation Gin was born. Many believe it was the first collaboration between distillers and bartenders in American history.
