
PRODUCTION Production area: Valle d’Itria Vinification: destemming of the grapes with immediate lowering of the temperature to 10°C, maceration beyond alcoholic fermentation of 10-15 days, racking and gentle pressing. Aging: after a short resting period, it is separated from the coarse lees, malolactic fermentation begins; once this is completed, the wine is transferred to medium and lightly toasted French oak barriques, where it remains in aging for 24 months. Once the maximum organoleptic expressions are reached, it is stabilized and bottled. Bottle aging of 6 months. TASTING NOTES Color: ruby red tending towards garnet. Aroma/taste: wine with thickness typical of ripe plum, well blended with spicy and balsamic notes, full and harmonious taste, confirming the sensations of the nose. Pairing: red meats, meat ragù, game, aged cheeses. Serve at cellar temperature.
