
PRODUCTION Production area: Salento Vinification: destemming of the grapes and first maceration without fermentation at 4-5° for 48 hours, after which yeast inoculation and fermentation with maceration until the end of fermentation for soft pressing, malolactic fermentation. Aging: 6 months in wood and for 3 months in bottle. TASTING NOTES Color: deep red with violet reflections. Aroma/taste: intense and persistent, the note of plum jam mixed with hints of black currant is very evident and well balanced. Pairing: sociable wine, enhances dishes with meat sauces, stews, and second courses based on red meat.
