Aging: at the end of fermentation it is separated from the gross lees and left to mature on the fine lees for 3 months, then it is stabilized and bottled. Bottle aging for 30/40 days. Color: straw yellow with greenish reflections. Aroma/taste: elegant and persistent with pleasant floral hints. Pairing: recommended with risotto, fish-based dishes, soft cheeses and white meats. Serve at 12-14 °C.
