
PRODUCTION Production area: Valle d’Itria Vinification: destemming of the grapes with immediate cooling of the temperature to 6-8° and maceration for 12 hours, soft pressing, static decantation and fermentation at controlled temperature of 16 - 18°C Aging: at the end of fermentation it is separated from the coarser sediment and left to mature on the fine lees for 3 months, afterwards it is stabilized and bottled. Bottle aging of 30/40 days. TASTING NOTES Color: straw yellow with greenish reflections Aroma/taste: elegant and persistent with pleasant floral notes Pairing: it is recommended with risotto, fish dishes, soft cheeses and white meats. Serve at a temperature of 12-14°.
