
Xoriguer is made from wine alcohol and uses Pyrenean juniper as a creative botanical. It is distilled in four copper stills (the oldest is a 250-year-old Charente model) heated with direct wood fire, following a centuries-old distillation process that has not been modified over the years. On the island, Xoriguer is used in the preparation of pomada, a mix of Mahón gin, lemon juice and sugar.
