
Unik The winemaking is carried out traditionally according to the classic method. Soft pressing of the grapes, fermentation in steel at controlled temperature. After fermentation, the wine is kept in contact with the lees through a batonnage operation. Aging on the lees for 24-48 months. Obtained from the best Chardonnay bunches from which only 1500 bottles are produced. The color is pale golden yellow with lemon-yellow reflections, very fine and persistent perlage. On the nose, acacia honey, fresh roses, poppy, linden, accompanied by aromas of apple and white peach, a purely mineral finish with iodine and chalky notes. On the palate it is fresh with a creamy and fine effervescence, light finish with notes of brioche bread and citrus, iodine. It leaves a caressing sensation and great delicacy. Recommended pairing with mixed appetizers, especially fish, fish first courses, sushi and sashimi, fried fish or fish tartare. Recommended temperature: 8-10°C
