This is followed by malolactic fermentation at a controlled temperature of 20°C. Aging in steel for about 5/6 months, followed by aging in bottle for 1 month. Light and bright ruby red, aroma initially with spicy hints, black pepper and small red fruits, then it evolves in the glass offering a softer and broader finish with notes of sweeter fruit, enveloping and intense flavor, with good persistence, with the light tannin characteristic of Grignolino barely perceptible. Pairings: cured meats and appetizers, first courses, white meats, bagna caoda. Ideal as an aperitif and with fish dishes.
