The winemaking is carried out in a traditional way, with fermentation using natural (indigenous) yeasts. Aging in food-grade concrete vats lasts about 2 years, where it settles naturally without the need for filtration. Then in bottle for about 6 months. The color is golden yellow. On the nose intense and persistent aromas, spicy and herbal, with marked savoriness. On the palate it is fresh and savory, with a clean and persistent finish. After about 5 years, minerality becomes more concentrated and the overall complexity increases with notes of graphite, moss and hydrocarbons. Around 10 years the wine reaches great delicacy and a very fine structure on the palate, but with great power and persistence. Recommended pairing with mixed appetizers, especially fish, first courses with fish, fish and shellfish, fried fish or fish tartare, salted cod and potato salad. Recommended temperature: 10-12° C
