Vinification is carried out in the traditional way, with manual harvesting of the grapes, skin fermentation at controlled temperature (28°-30°C) for about a week and continuous maceration on the pomace for at least another 10 days with frequent pump-overs, followed by soft pressing. Aging in French oak tonneaux completes malolactic fermentation for about 10 months. Then in bottle for a few months. Wine with the prospect of excellent longevity. The color is bright ruby red with violet reflections. On the nose it is intensely herbaceous, with notes of vanilla, tobacco and ripe fruit. On the palate it is warm, soft, full, with sweet and fresh tannins, with great breadth and persistence of flavor. Recommended pairing with meat first courses or risottos, red meats, roasts, grilled meats, braised dishes and well-aged cheeses. Recommended serving temperature: 16-18° C
