Late harvest is the key to interpreting an enveloping white wine, made from grapes strictly hand-picked after natural drying on the vine. It is then manually destemmed, subjected to low-temperature maceration, and fermented in tonneaux. Aging in stainless steel for a few months. The color is deep straw yellow, with golden highlights tending toward amber. On the palate it is pleasant, harmonious, with a delicate, slightly persistent finish. Recommended pairing with dessert after meals, especially mousse and bavarois. Ideal with aged cheeses.
