
Cedro Riserva Vinification is carried out in the traditional way, with manual grape harvesting around mid-October, gentle destemming of the grapes, maceration and fermentation in steel at controlled temperature for about 15 days. Aging in oak barriques for about 24 months, then blended in oak casks for another 18 months. It perfectly reflects the character of the Chianti Rufina terroir, an expression of Tuscan wine. Obtained from thirty-year-old vines, it is a wine that stands out like the centennial cedar in the center of the estate. The color is bright, intense ruby red. On the nose it is broad, clean and particularly enveloping, with fruity notes and light spices. On the palate Sangiovese immediately reveals all its greatness, soft and velvety, with hints of ripe sour cherry and a touch of cassis; the tannins are well integrated, dense and fleshy, and the finish is elegant and of good persistence. Recommended pairing with meat first courses or risotto, red meats, roasts, grilled dishes, braised dishes, and well-aged cheeses. Recommended temperature: 18-20°C. It is advisable to decant particularly aged bottles.
