
Manual grape harvesting, vinification is done in white, separating the skins from the must to enhance the varietal characteristics. Produced using the Martinotti method, it is placed in stainless steel autoclaves and sparkling wine is obtained with selected yeasts for about 5/6 months at a controlled temperature of 18°C. It is then cooled to -4°C for about 8/10 days to stabilize, then filtered and bottled. Aging is completed for about 3/4 months in bottle. The color is peach blossom pink with bright peony reflections. The effervescence is good with lively and consistent foam, numerous bubbles, fine and persistent. On the nose, fruity and floral notes are perceived, with hints of peach, vanilla and exotic fruit, raspberry, pomegranate and wild strawberry, and scents of wild rose. On the palate it is fresh and balanced between softness and acidity, with a long finish on the palate, intense and persistent, bringing back the same hints perceived on the nose. Recommended pairing with cured meats and cheeses as an aperitif, to try with pizza or cheese burger, stuffed au gratin vegetables, octopus and potatoes, pasta and beans. Ideal choice when a white is too weak and a red risks overpowering the dishes. All the Sicilian territorial character in a glass of wine. Serving temperature: 10-12°C.
