The Grande Année Rosé champagne from the Bollinger house is produced, as the label suggests, only in exceptional vintages, namely those in which the vintage and grapes are of outstanding quality, providing the basis for the production of a great champagne. The product can be imagined as a nectar that condenses the identity of the region, the vintage, the extraordinary grapes and the indispensable savoir-faire of the house into a single sip. The grapes used for Bollinger's Grande Année Rosé are Pinot Noir from Aÿ and Chardonnay grown in Oger and Cramant, both Grand Cru territories. The bunches are carefully harvested strictly by hand, followed by gentle pressing at a controlled temperature. Vinification and fermentation take place in wooden barrels. The sparkling-wine production then begins using the traditional méthode champenoise. The wines destined for this cuvée are bottled in magnum format (1.5 L) and sealed with a cork during the second fermentation, instead of the traditional capsule (bidule). This results in a continuous and infinitesimal oxidation process, very slow, which brings greater complexity and maturity to the wine while preserving exceptional freshness. The lees aging lasts at least 5 years. Disgorging is carried out by hand; the final dosage is Brut, with very few grams of sugar (7 g). Coral in color, captivating and delicate, with immediately elegant notes of raspberries, pomegranate, redcurrants and strawberries. This is a broad, delicate yet dry, clean and precise champagne. On the palate it is intense and savory, with a silky, elegant and rhythmic mousse. Pronounced acidity. It is not especially full-bodied, but it is certainly persistent. It could undoubtedly develop even more complex and full-bodied sensations over time: without a doubt, it has all the substance required!
