A perpetual cuvée: 500 bottles per year, always unique! Limited and numbered edition, presented in a gift box with a unique design, together with scissors for cutting the cord that replaces the wire cage. To preserve the purity and authenticity of this wine, a traditional closure with cord was chosen, reflecting the very nature of the product. In an unprecedented initiative in the Champagne region, a label made of real natural stone was used. Origin: this cuvée comes from a maison with 10 hectares of vineyards located in the village of Passy-Grigny, in the heart of the Vallée de la Marne. Cultivation is HVE-certified (High Environmental Value) and benefits from exceptional sun exposure, ideal for growing Pinot Meunier. In the cellar: only 6 hl of cœur de cuvée are extracted from the grapes, with blending carried out directly in the press. No malolactic conversion takes place, and 20% of the reserve wine is made using the solera method. Characteristics: it has a straw-yellow color, with an intense fruity and mineral bouquet. On the palate, it is well balanced and persistent. Pairings: ideal with dishes featuring complex flavors such as curried prawns, maltagliati with carpet-shell clams, fried fish with sauce, scallop tartare, tuna tartare, beef tartare, and white meats prepared with elaborate recipes.
