
On a vineyard area of 7.32 hectares, located entirely in the village of Oger, grapes are cultivated exclusively for the production of Grand Cru Champagne: 100% Chardonnay Oger mono-cru, 100% single-varietal. The soil is dominated by chalk, one of the main elements for maximizing and enhancing the quality of Chardonnay. They are about to obtain HVE certification (Haute valeur environnementale) by the end of 2022, with harvests carried out strictly by hand. The grapes are pressed with a traditional oak Cocquard press. Most of the cuvées are disgorged using the traditional "à la Volée" method. In the cellar: the manual harvest of the 2016 vintage comes from vines with an average age of over 50 years. After vinification and ageing in stainless steel, malolactic fermentation is completed and the wine remains on the lees for at least 60 months. Characteristics: straw yellow in color, with elegant and delicate effervescence. The nose reveals notes of almonds and candied white fruit, with a slight hint of brioche. On the palate it is firm, persistent, complex, with aromas of dried fruit and honey. A powerful vintage blanc de blancs to be enjoyed by true enthusiasts. Pairings: perfect with seafood dishes.
