
Champagne Viellard-Millot is a family business, now in its 6th generation, with vineyards right next to the village of Ambonnay. The estate covers 2.23 ha, made up of 9 plots, managed with sustainable viticulture practices and without the use of insecticides. Winemaking and sparkling wine production are carried out at the Centre Vinicole d’Ambonnay, and all the cuvées produced bear the Grand Cru designation. Manual harvest, pressing for 85% of first-press juice (the cuvée) and 15% of the following press (the taille); vinification and aging in stainless steel before bottling, for the base vintage (2016; 60%) and for most of the reserve wine (15 vintages in "réserve perpétuelle", of which 10% is aged in oak). Malolactic conversion carried out and aging on the lees in bottle for at least 48 months. Yellow in colour with golden reflections, the nose reveals toasted notes, biscuit and pastry, with hints of ripe wheat. Chardonnay seems to dominate with its lovely freshness. On the palate it is rich and energetic, with a nice correspondence to the aromatic traits. A Champagne for all occasions, ideal as an aperitif or paired with melted cheese, grilled fish or carpaccio and seafood in general. Serving temperature: 10 °C.
