
Champagne Viellard-Millot is a family business, now in its 6th generation, with vineyards right next to the village of Ambonnay. The estate covers 2.23 ha, made up of 9 plots, managed with sustainable viticulture practices and without the use of insecticides. Winemaking and sparkling wine production are carried out at the Centre Vinicole d’Ambonnay, and all the cuvées produced bear the Grand Cru designation. Manual harvest, pressing for 100% of first-press juice (the cuvée); vinification and aging in stainless steel before bottling, both for the base vintage (2016; 50%) and for the reserve wine (3 vintages). Malolactic conversion carried out and aging on the lees in bottle for at least 48 months. Intense deep golden yellow in colour, it has a fine and delicate effervescence. On the nose, an immediate hint of liquorice and moss appears, with balsamic notes, pine and resin. The attack on the palate is full and rounded, a Pinot Noir of great intensity, elegant, fleshy and spicy, with a lovely savouriness and a finish of cherries in alcohol. A decidedly gastronomic Champagne, excellent paired with duck breast, game or a classic quiche Lorraine. Try it with a contrasting pairing such as cherry tart. Serving temperature: 10 °C.
