This orange honey appears almost colorless when still liquid, while it becomes pale yellow, pearly white when crystallized. Its medium-low intensity aroma reminiscent of orange blossoms is floral, while the flavor has medium aromatic intensity, between floral and fruity, reminiscent of jasmine. Crystallization often presents large sandy crystals, semi-rapid that tends towards white. PROCESSING METHODS. It is extracted only with natural products in the first weeks of April and the extraction of the honeycombs is done by centrifugation without any heat treatment to preserve its quality. USES. Excellent for sweetening a cup of tea, spread on a slice of toasted bread and for accompanying cheeses.
