The distillation of the grape pomace is achieved through the traditional method of the pot still. Aging takes place inside the barrel, also known as "barrique", a small wooden barrel with a capacity of 225 liters. Curiosity: The term "barricata" comes from these barrels; in fact, during the French Revolution, they were filled with earth or debris and placed along borders or roads to create barriers.
