
The cake called "Spongata" is an ancient baked dessert typical of the areas of Reggio Emilia, where its epicenter is located in Brescello, in the province of Parma. It is a very ancient product whose origins are not entirely clear, but traces of a dessert similar to the current one can already be found in the medieval period. Currently, that produced by our Company comes as a round-shaped cake made of shortcrust pastry, sprinkled with a layer of white icing sugar, inside which is enclosed a sweet-flavored filling with a slightly spiced aftertaste and a soft consistency. The history of Spongata di Don Camillo The town of Brescello is famous not only for the fortunate saga of Guareschi (Don Camillo and Peppone) but also for a delicious dessert: the Spongata cake which our company wanted to dedicate to this character known and loved by all. It is a very rich baked dessert, with a shortcrust pastry shell containing a special brownish filling made of almonds, orange cubes, sultana raisins, honey, butter, apricot jam, spices and aromas. The historical origin Its origins are very ancient, as with many sweets produced in our beautiful Italy, more or less with the same ingredients. It seems to date back to the mid-fifteenth century, although it only became typical of the Emilian gastronomic tradition in the second half of the 19th century. Production began in 1863 with the Bacchi family and continues to this day like it did in the past, still made by hand.
