This type of oil is called Francesco and is predominantly composed of Grignano variety olives and a small percentage of Maurino variety (10-20%). This oil appears emerald green, with a medium fruity scent and flavor of arugula and slightly bitter herbs, field flowers with a faint citrus aroma. Persistent and harmonious, it has a slight bitterness that fades over time.
