Black chickpeas are an excellent food rich in protein, starch and minerals, as well as a rich source of dietary fibre. Their skin is rough, irregular and black. Their intense flavour also makes them perfect when simply cooked and dressed with good extra virgin olive oil. We recommend soaking them for at least 36 hours and cooking them for up to 60-90 minutes. If you use a pressure cooker, 40 minutes from the beginning of the whistle will be sufficient.
