Purslane, also known as hogweed, is a succulent Mediterranean summer wild herb with small round leaves and a tender reddish stem, rich in omega-3 and linoleic acid. This particular product is made at the Alchimie di Circe farm and is naturally vegan and gluten-free. Unfortunately, its use has been forgotten and it is one of the wild plants most often uprooted from Italian gardens. This version is prepared as giardiniera according to the Piedmontese method, making it tastier and more floral, immersed in fragrant Umbrian extra virgin olive oil, which rounds out its flavour.
