Preheat the oven to 180°C.
Peel the apples, core them and slice them.
In a bowl, whisk the eggs with the sugar until you get a light and frothy mixture.
Add the seed oil and mix well.
Sift the flour with the baking powder and cinnamon, then incorporate into the egg mixture.
Add the sliced apples and grated lemon zest, mix gently.
Pour everything into a 24 cm pan and level the surface.
Sprinkle with a heaping tablespoon of sugar to caramelize during baking.
Bake in the oven for about 45 minutes.
Let cool before serving.
Store in an airtight container at room temperature
Serve with vanilla ice cream and salted caramel for an extra touch of indulgence.
