It is a tasty and tempting last-minute dinner saver starring one of the tastiest pairings ever: potatoes and salmon. To make it, you only need to follow a few simple steps.

1. Wash and peel 5 medium-sized potatoes, then cut them into fairly thin slices.
2. In a bowl, crack two eggs, pour in a full glass of milk, add salt, pepper and parsley. Mix well.
3. Grease a baking dish and sprinkle it with breadcrumbs, then start layering the potatoes and the chopped salmon.
4. Once the layers are finished, pour the milk and egg mixture evenly over the top.
5. Finish with a generous sprinkling of grated Parmesan on the surface of the potatoes and bake at 200 degrees for about 35/40 minutes

It can be stored in the fridge for a couple of days or frozen in single portions.
I used salmon, but a plant-based ingredient or whatever you have in the fridge and don't want to waste will work perfectly too.
