Typically liquid in appearance, it is particularly suitable for infants and children, especially when the mucous membranes of the respiratory and gastrointestinal systems are inflamed. Its richness in levulose makes it tolerable in small doses for diabetics. It is also recognized as mildly laxative. It is light amber and transparent, with a sweet smell and a delicate, fine, velvety confectionery flavour. Its appearance is typically liquid. AmoreTerra honey comes exclusively from hives located in Basilicata, in unspoilt places near organic farms. The main difference from conventional honey lies in the healthcare products used to treat bee diseases. We use only natural thymol-based products and no antibiotics, which consequently end up in the honey. Honey is born liquid and, over time, if it undergoes no heat treatment, it crystallizes. Our liquid honey is processed at a temperature not exceeding 40 degrees, the temperature of the hive, thus preventing pasteurization, meaning heating to 90 degrees, which denatures all the enzymes, vitamins and proteins and consequently everything beneficial in honey! The honey produced by our bees is collected only when fully mature, that is, when the bees completely seal the cells where they have previously deposited the honey. The honey supers are then removed, driving the bees away only with a blower, without smoke or, worse still, chemicals to calm them. Extraction is carried out cold, without preheated knives. Centrifugation takes place at low speed; the honey is then left to rest in suitable maturation tanks for 15 days before being jarred. To guarantee the further quality of our honey, we care for the health and nutrition of the bees. More than 40% of the harvest is left inside the hive so that the bees can feed during the harshest months, avoiding feeding them sugary substances other than their own honey.
