The maturation of Hennessy Very Special largely depends on the selection of new oak barrels, which come exclusively from France. They give the cognac its intense expression. The maturation process is guided in the desired direction through the use of partially used barriques. This ensures the formation of warm and pleasant toasted notes, which create a counterbalance without dominating the overall effect of the blend. It is a very dynamic maturation process, during which the barriques are exchanged very frequently. The younger spirits are aged for 2 years. During this period, they are exposed to oxygen at regular intervals to support the formation of their typical aromas of crème brûlée and cane sugar. Their vanilla notes give the cognac a creamy flavor and accentuates the fruit. Blending is the last step in the creation of Hennessy Very Special. It does not serve to create aromas, but to develop the very particular characteristics of the cognac in terms of balance and consistency.
