The vines grow on a moderately textured, deep, and predominantly calcareous soil, located on a hill at an altitude ranging between 230 and 260 meters above sea level. The grapes are all harvested by hand in small boxes. The vinification of Adènzia Red follows the traditional red method with maceration on the skins for 15-20 days at controlled temperature. After twelve months in large French oak barrels, the wine is refined in the bottle for at least thirteen months. After decades spent cultivating harvests, the vision of a new winemaking path is born, in search of absolute quality, with the awareness of having the right resources, the right place, an extraordinary microclimate, and qualified people. Thus was born the idea of Baglio del Cristo di Campobello, producer of our Adènzia Red Wine Doc Sicilian. Taste Notes: The notes of cherry and berries blend with delightful hints of vanilla. The Adènzia Red Wine Doc Sicilian from Baglio Cristo di Campobello is enveloping and spicy and features assertive yet graceful tannins. Pairing: The Adènzia Red Wine Doc Sicilian pairs well with white meat dishes, red meat, and cheeses. It should be served at a temperature between 18° and 20°. Curiosity: The name of the Adènzia Red Wine Doc Sicilian derives from the Sicilian word “adènzia”: “to give adènzia” means to pay particular attention, to go deep. Baglio del Cristo di Campobello chose to name the wine this way to emphasize the added value that comes from the union of the two grape varieties.
