
Milazzo Excellent Rosé Extra Dry Bio Alcohol: 12.5% vol Format: 750 ml Milazzo Excellent Rosè Extra Dry Bio, classic method, has a beautiful pink color with salmon reflections. The perlage is very fine and persistent. On the nose, Milazzo Excellent Rosè Extra Dry Bio reveals aromas of exotic red fruits, with lychee and strawberry standing out. On the palate, it is creamy and sweet, enhancing the aromatic notes of fruit and pastry, and promotes a cross-sectional complexity. Milazzo Excellent Rosè Extra Dry Bio Metodo Classico is produced from particular selections of an ancient biotype of Calabrese, known in the area of Campobello di Licata as Inzolia Rosa, enriched with the aromatic contribution of biotypes of Chardonnay cultivated in the Milici area. Aging: 18 months of fermentation on the yeast, for a slightly sweet version (17% total sugar). Sensory notes: Creamy and sweet, with aromas of red fruits, Milazzo Excellent Rosè Extra Dry Bio pairs perfectly with delicate dishes, particularly with first courses. Characteristics: Grapes: Particular selections of an ancient biotype of Calabrese, supported by the aromatic contribution of biotypes of Chardonnay. Soil type: Milici, plateau of marl origin with a high clay component, strongly calcareous and rich in skeleton; Munti, lower slope with a gentle decline, very organic and rather deep soil. Training system: Tent and Guyot. Harvest time: First half of August for Chardonnay; first half of September for Inzolia Rosa. Harvesting method: Manual in boxes of 14 kg. Vinification: The red grapes are destemmed and after a brief cold maceration of a few hours, they are pressed. The white grapes are pressed whole bunch. The free-run juice is fermented at controlled temperature. The base sparkling wines are aged in steel. Maturation: The cuvée, with the addition of “liqueur de tirage”, is started to undergo second fermentation. The bottles have been stacked, where they remained for 18 months on the yeasts. DESCRIPTION: The enhancement of indigenous grape varieties, even through the rediscovery of ancient biotypes, experimentation in the vineyard in the selection of clones, and careful soil management are key elements of our work as winegrowers. A journey that continues under the sign of enhancing the company tradition, with Giuseppina Milazzo and Saverio Lo Leggio, couple in life, united in the desire to continue the Milazzo production. Among the first Sicilian winegrowers, in the late '70s and early '80s, they enhanced the winemaking from indigenous grape varieties, contributing to the recovery of the island's winemaking tradition and experimentation and innovation, which led to the adoption of Chardonnay grapes, aimed at producing a great Sicilian Classic Method sparkling wine. In the post-war years, the production of wine grapes was joined by that of table grapes. In the '60s, new wine vineyards replaced table grape cultivations, marking a new phase in the family history.
