Spumante Nature Brut Bio Metodo Classico. Alcohol: 12.5% vol. Format: 750 ml. Spumante Nature Brut Bio Metodo Classico of a beautiful crystalline color, pale yellow with appropriate green reflections, persistent and excellently crafted perlage. Spumante Nature Brut Bio Metodo Classico finishes with excellent minerality, reminiscent of flint. No yeast or pastry aromas are perceptible, in perfect coherence with the Nature style. The nose, although rich, does not suggest creaminess, but rather a muscular yet nimble and agile impact. On the palate, Spumante Nature Brut Bio Metodo Classico confirms the initial sensations: it is fresh, balanced in structure, persistent, and savory to the end. Spumante Nature Brut Bio Metodo Classico: Milazzo NATURE is a Blanc de Blanc from Milazzo Chardonnay grapes, where the perfect synthesis between the best expressiveness of Chardonnay grapes and the combination of terroir and Mediterranean climate can be found. In fact, due to the climate of Campobello di Licata, we manage to achieve full ripening of the selected grapes for our Spumante Nature Brut Bio Metodo Classico, capable of preserving freshness, elegance, and aromatic vein. Characteristics: GRAPES: Chardonnay. SOIL TYPE: Milici, a high plain of marly origin with a high clay component strongly calcareous. TRAINING SYSTEM: Guyot. HARVEST TIME: First half of August. HARVESTING METHOD: Manual in 14 kg crates. VINIFICATION: The aging of the base sparkling wines takes place partly in steel, partly in oak barrels. MATURATION: The cuvée, with the addition of 'liqueur de tirage', is started to the sparkling process. The bottles are stacked, where they remain for a minimum of 48 months on the lees. The product is defined as 'zero dosage', as the 'liqueur d'expedition' contains no added sugars and the residual sugar, naturally present in the wine, does not exceed 3.0 g/l. DESCRIPTION: A 'Mediterranean' expression that manifests itself with a style in winemaking choices and cellar practices aimed at preserving and enhancing territorial expression. A FAMILY STORY. For the Milazzos, producing wines is a true 'family matter', making them the first producers of classic method sparkling wines in Sicilian land, a journey that continues under the sign of enhancing the company's tradition, with Giuseppina Milazzo and Saverio Lo Leggio, a couple in life, united in the desire to continue Milazzo production. Among the first Sicilian winemakers, from the late seventies to the early eighties, to enhance vinification from indigenous Sicilian grape varieties. This has allowed, over the years, along with other excellent names, the recovery of the island's winemaking tradition, without neglecting experimentation and innovation, which has led, among others, to the adoption in Sicily of Chardonnay grapes, with the specific intent to produce a great Sicilian Classic Method sparkling wine. A SUSTAINABLE COMPANY: ISO and Organic certifications. Being a sustainable company means accepting the challenge of continuous change, working well today to produce better tomorrow. Currently, it is also engaged in the program for analyzing the carbon footprint throughout the production chain. We want to guarantee the quality of our work through a path that effectively combines low environmental impact farming techniques and innovation in various stages of our wine and classic method sparkling wine production. Our Steps Towards SUSTAINABILITY. Early 1900s - Maria Costanza, a strong-willed family ancestor, dedicated herself personally to grape growing and winemaking; she oversaw all processing stages. A small cellar in Campobello di Licata, but even then, the wine produced was much appreciated by the local clientele. In the post-war years, grape production for wine was accompanied by table grape production. By the end of the sixties, new vineyards for wine grape production replaced table grape crops, thus initiating a new phase in the family history. The Azienda Agricola G. Milazzo was born, not simply to make wine and become a profitable business, but above all to be a company dedicated to the obsessive search for quality and continuous improvement. 1982: registration of the trademark 'Martin Pescatore', already used in the post-war years and until the early sixties for the marketing of table grapes in international markets. 2004: first certification: UNI ENI ISO 14001 for the activation of the Environmental Management System. 2007: the long-implemented choice of not using synthetic chemical substances begins to be certified. This year begins the mandatory transition period that will lead to organic product certification, which will be completed in 2012. 2008: UNI EN ISO 9001 certification for the Quality Management System and UNI EN ISO 22005 for the Traceability of the production chain, from fertilization, pruning, and all vineyard work, to winemaking in the cellar, and delivery to customers. 2012: Organic certification, which represented the achievement and at the same time the new starting point of our production path, opening us up to new challenges. Our Martin Pescatore brand is joined by the European organic brand. A journey that began in 2007 and concluded in 2012, with the achievement of the final certificate (Certificate No. 2500/I rev. 02). A commitment that concerns not only our 75 hectares of vineyards but the entire Milazzo property, which now totals about 110 hectares. Every single parcel of the company, even if not vine-planted, is either certified or in 'conversion' to ORGANIC CERTIFICATION. A fundamental choice, the only one that allows us to continue to plant vineyards in the future, respecting our motto: We guarantee the genuineness of our wines. 2013: a new challenge begins. That is the reduction of CO2 emissions (carbon) at every stage of production (from field to consumer). We decided to adhere to the Ita.Ca. protocol, for the development of a carbon footprint calculation tool, an 'international calculator', already used in Italy, Australia, California, and New Zealand, specifically adapted to the Italian grape and wine production model by researchers and technicians from the SATA group and the University of Milan, in collaboration with Australian colleagues. 2013: participation in the call issued by the Ministry of the Environment for the analysis of the carbon footprint in mass-consumption products. Another completed step. Today we are among the 95 Italian companies from various production sectors and the only Sicilian winery admitted to the program. 2014: running a business while consuming and polluting less represents a complex challenge, both from a scientific and organizational standpoint. But we are, first and foremost, men and women of the land, and we are convinced that we have only one choice: to protect the environment so that it can continue to gift us with healthy and good fruits. Within the ministry's project, we are now committed to obtaining ISO/TS 14067 Carbon footprint product certification, which will validate the method by which we are collecting and analyzing data on our CO2 emissions, to then identify the best technical solutions for the effective reduction of our 'Carbon footprint'.
