The Dried Tomato, present in the Sugo Sole di Sicilia, is the absolute king of their production. It is the best tomato for preparing sauces: it is rich in pulp and low in water; it makes our sauces tasty and full-bodied, sweet and genuine; it is rich in antioxidants (lycopene) and vitamins A and C; it grows in the arid lands in the center of Sicily, between Villalba and the Valle del Bilìci. The Sugo Sole di Sicilia is a ready-made condiment for pasta and/or rice, suitable for the preparation of fish fillets. It can be preserved for over twenty-four months from production, if not exposed to intense light and temperatures exceeding about 25 °C. After opening the jar it is stored in the refrigerator. The plant grows completely naturally, aired by the wind and kissed by the sun. The double steaming process preserves aromas and characteristics and makes the sauce more digestible. The aromas and extra virgin olive oil are added at the end. The tomatoes are harvested within 8-10 hours at most before processing. Long preservation is guaranteed by natural pasteurization.
