Their cellars are largely underground and designed with an eye towards minimizing environmental impact. Built with materials intended to contain energy consumption and achieve low emissions in air conditioning, with the aid of technologies to ensure maximum hygiene and ideal care of the product. Pneumatic presses with a central bladder are used for pressing, operating at very low pressures to work gently on the grapes. The maturation of their wines in steel occurs entirely “sur lie”, keeping the lees suspended to promote the transfer of aromatic components from the yeast into the wine. Their barrel room extends entirely beneath the cellars and contains over 500 barriques destined for aging both white and red wines, as well as some bases for classic method sparkling wines. Here the barrels are filled and monitored. The passage in barrel plays a primary role in ensuring the best evolution of our wines. The choice of wood is fundamental. The barriques are all produced in the best “tonnelleries”, strictly with oak wood. We use new barriques with a renewal cycle every five years. The cutting is the most delicate moment. After harvest, pressing, fermentation and the various paths of maturation and aging, each wine in our collection undergoes this delicate phase, which seals the work of the winemaker and their collaborators, before entering the bottle where it will continue to evolve until the moment it is poured into the glass.
