Vino Terre della Baronia Dop Bianco Bio is a Catarratto with a fresh and fruity profile, aged for a few months in steel. The aromatic range consists of notes of white flowers, aromatic herbs, and tropical fruit with a subtle saltiness. The taste is rich and light, juicy, clean, and pleasantly savory. Vino Terre della Baronia Dop Bianco Bio presents varied aromas, among which a nice reference to the Mediterranean scrub stands out, dominating the landscape of the Sicilian island. It is born from the pure use of an indigenous white grape variety, the Catarratto, widely cultivated in Sicily. The grapes of this variety are cultivated in Milazzo using the Guyot method in the vineyards within Garcitella, in nine different areas that are strongly suited. The terroir is characterized by a marly subsoil, rich in clay and limestone. The grapes, harvested in mid-September and taken to the winery's winemaking rooms, ferment in steel and continue aging, also in steel, for several months, until the bottling moment. Milazzo, the producer of our Vino Terre della Baronia Dop Bianco Bio, is a reality born in Campobello di Licata in Agrigento; they were among the first Sicilian winemakers, between the late seventies and the early eighties, to enhance winemaking from indigenous Sicilian grapes. Their cellars, largely underground, are designed to reduce environmental impact, built with materials that limit energy consumption and ensure low emissions in air conditioning, using technologies to achieve ideal hygiene and care of the product. For pressing, central bag pneumatic presses are used with very low operating pressures to avoid damaging the grapes. The maturation of their wines in steel occurs entirely "sur lie", favoring the transfer of the aromatic components of the yeast into the wine. Their barrel cellar, located in the underground part of the cellars, contains over 500 barriques intended for the aging of white and red wines, and some bases for classic method sparkling wines. Here the barrels are filled and monitored. The passage in barrique is essential to ensure the best evolution of the wines. The barriques are all produced in the best cooperages using oak wood, with a renewal cycle every five years. The cutting phase is delicate; after the harvest, pressing, and fermentation, each wine of their collection undergoes this crucial step, which seals the work of the winemaker and their collaborators, before being bottled and continuing to evolve until the tasting moment. It is at this stage that the characteristics of the grape and the Milazzo imprint in winemaking are found in synthesis.
