Milazzo, the producer of our Wine Terre della Baronia Rosato Dop Bio Sicily, is a producing reality born in Campobello di Licata in Agrigento; they were among the first Sicilian winemakers, between the late 1970s and early 1980s, to enhance the winemaking from native Sicilian grape varieties. Their cellars are largely underground and designed with the aim of minimal environmental impact. Built with materials suitable for containing energy consumption and achieving low emissions in conditioning, with the help of technologies for obtaining maximum hygiene and ideal care of the product. For pressing, pneumatic presses with a central bladder are used with very low operating pressures to work delicately on the grapes; the maturation of their wines in steel occurs entirely "sur lie", suspending the lees to promote the release of the aromatic components of the yeast into the wine. Their barrel room extends completely underground in the cellars and contains over 500 barriques intended for the refinement of both white and red wines, and some bases for classic method sparkling wines. Here, the barrels are filled and monitored. The passage in barrique plays a primary role in ensuring the best development of our wines. The choice of their woods is fundamental. Our barriques are all produced in the best "tonnelleries", strictly with oak wood. We use common new barriques with a renewal cycle every five years. The most delicate moment. After harvesting, pressing, fermentation, and the various maturation and aging paths, each wine in our collection undergoes this delicate phase, which seals the passionate work of the winemaker and his collaborators, before entering the bottle, where it continues to evolve until the moment it is poured into the glass. It is at this stage that the long work of creating the wine reaches its completion, a journey of patience and technique that sometimes unfolds over many years.
