Arborio rice originates in Piedmont and takes its name from the town in the province of Vercelli where it was first discovered and selected. The very large grains have a starch-rich core that gives them distinctive behaviour during cooking: heat easily penetrates the outer part of the grain but cannot reach the central core, which remains al dente. Precisely because of this distinctive characteristic, Arborio is particularly suitable and appreciated for preparing risottos. The classic Milanese risotto was historically prepared with this rice variety. Nutritionally, Arborio rice from Antica Riseria San Giovanni is low in fat, allergen-free and gluten-free, making it also suitable for people with coeliac disease.
