Metodo Classico Brut Rosè Grape variety: 50% Arneis, 50% Nebbiolo Name: Diecigiugno Alcohol: 11.5° Format: 0.75L Production area: Montà (CN), Piedmont, Italy Description: The grapes are stored at controlled temperature (close to 2°C) and humidity for approximately 7 days; destemming and cold maceration of the crushed grapes for 18-24 hours at approximately 10°C; gentle pressing and subsequent fermentation in 500-liter tonneaux for approximately 30 days; batonnage until spring. The second fermentation takes place in September of the year following the harvest. Aging on the lees may last from a minimum of 18 to 30 months. Remuage is carried out manually on pupitres through 21 positions. Remuage lasts approximately 40 days. Rosé-colored wine with copper reflections; the perlage is fine and persistent; the bouquet is intense, with subtle hints of bread crust, hazelnut and honey, along with more pronounced notes such as rose and white flowers. On the palate the wine is savory, enveloping and highly persistent. Excellent as an aperitif, recommended with appetizers and first courses or to accompany grilled fish and shellfish; it fully expresses its character with baked fish.
