Gentle pressing of the grapes, fermentation in steel tanks at controlled temperature. After fermentation, the wine is kept in contact with the yeasts through a batonage operation for another 6 months. The aging is at least 18-24 months on the yeasts. The color is pale straw yellow, with fine and persistent bubbles. On the nose, there are very subtle citrus and floral notes. On the palate, it is decidedly balanced with a predominance of citrus sensations and a fine aroma of pear, persistent and with pleasant toasted and honey notes. Recommended pairing with appetizers, fish pasta dishes, desserts in general. Recommended temperature: 8-10° C.
