Gentle pressing of the grapes, fermentation in stainless steel tanks at controlled temperature. After fermentation, the wine is kept in contact with the lees through a batonage operation for another 6 months. The aging is at least 30 months on the lees. The color is bright straw gold, with very fine and persistent bubbles. On the nose, it presents notes of ripe fruit and white flowers, which turn to aromatic herbs first and then to mineral. On the palate, it is fresh and juicy, soft, and finishes persistently with delicate notes of hazelnut and vanilla. Recommended pairing with mixed appetizers, especially fish, seafood risottos, sushi and sashimi, fish fry or fish tartare. Recommended temperature: 8-10° C
