VINIFICATION The Cuvée Brut is born from single vinifications of Pinot Noir and Chardonnay grapes, strictly hand-picked. The grapes are carefully placed into the press and just touched to allow the must to settle before fermentation. After 270 days of aging “sur lies,” the magical rite of creating the Cuvée takes place.
