
The Grande Année Rosé champagne from the Bollinger house is produced, as suggested by the label, only in exceptional vintages, meaning those in which the year and grapes are of superb quality, serving as the premise for the production of a great champagne. The product can be imagined as a nectar that condenses in a sip the territorial identity, the vintage, the extraordinary grapes, and the indispensable savoir faire of the house. The grapes used for the Bollinger Grande Année Rosé are Pinot Noir from Aÿ, and Chardonnay grown in Oger and Cramant, thus Gran Cru territories. The careful harvesting of the bunches occurs rigorously by hand, to be followed by a soft pressing at controlled temperature. The vinification and fermentation take place in wooden barrels. Then begins the sparkling process with the traditional Methode Champenoise. The wines destined for this cuvée are bottled in magnum format (1.5 lt) and sealed with a cork during the foaming process, instead of the traditional capsule (bidule). This way, a continuous and infinitesimal process of very slow oxidation is achieved, which brings more complexity and maturity to the wine, preserving exceptional freshness. The aging on the lees lasts a minimum of 5 years. The disgorgement operations are manual; the final dosage is Brut, thus with very few grams of sugar (7 gr). Coral color, captivating and delicate, immediately elegant notes of raspberries, pomegranate, currants, and strawberries. It is a broad champagne, delicate, but dry, clear, precise. On the palate, it is intense, savory, with silky bubbles, elegant, rhythmic. Sharp acidity. It is not very full-bodied, but definitely persistent. It could certainly evolve into even more complex and substantial sensations over time: without any doubt, it has all the substance!
