To preserve the purity and authenticity of this wine, a traditional closure with rope has been chosen, a choice that reflects the very nature of the product. In an unprecedented initiative in the Champagne region, a label made of real and natural stone has been used. Origin: this cuvée comes from a house with 10 hectares of vineyards located in the village of Passy-Grigny, in the heart of the Vallée de la Marne. The cultivation is HVE (Haute Valeur Environnementale) certified and benefits from exceptional sun exposure, ideal for growing Pinot Meunier. In the cellar: only 6 hl of cœur de cuvée are extracted from the grapes, with assembly directly in the press. There is no malolactic conversion, and 20% of the reserve wine is made using the solera method. Characteristics: it presents a straw-yellow color, with an intense fruity and mineral bouquet. On the palate, it is well balanced and persistent. Pairings: ideal with dishes with complex flavors such as curry prawns, maltagliati with clams, fried fish with sauce, Saint-Jacques tartare, tuna tartare, beef tartare, and white meats cooked with elaborate recipes.
