Vinification and sparkling wine production are carried out at the Centre Vinicole d’Ambonnay and all the cuvées produced are labeled with the Grand Cru designation, ensuring extraordinary quality thanks to patience and respect for tradition. In the cellar: manual harvesting, pressing for 100% first press juice (the cuvée); vinification and aging in steel, before bottling both for the base vintage (2016; 50%) and for the reserve wine (3 vintages). Malolactic conversion completed and aging on the lees in bottle for at least 48 months. Disgorgement is carried out at least 6 months before release to market. Characteristics: of intense golden yellow color it presents a fine and delicate effervescence. On the nose, an immediate scent of licorice and moss with balsamic notes of pine and resin.
